  • 1 cup extra-firm tofu, cubed
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons vegetable broth
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Chop mixed vegetables into bite-sized pieces. Drain and press tofu to remove excess moisture before cutting it into cubes.
  2. In a large skillet or wok over medium heat, add vegetable broth. Sauté minced garlic and grated ginger until fragrant (about 1 minute).
  3. Add cubed tofu and cook until golden brown on all sides (about 6 minutes).
  4. Stir in mixed vegetables and cook until vibrant yet crisp (approximately 5 minutes).
  5. In a small bowl, whisk together soy sauce, sesame oil, cornstarch mixture, and additional vegetable broth. Pour over stir-fried ingredients.
