  • 1 pound raw shrimp (peeled, deveined, sliced in half lengthwise)
  • 1 cup lime juice (about 34 large limes)
  • Salt to taste
  • 1 small red onion (thinly sliced)
  • 1 teaspoon white vinegar
  • 3 cloves garlic (chopped)
  • 3/4 cup fresh cilantro
  • 1 large jalapeno pepper (chopped)
  • 1 medium cucumber (peeled, deseeded, sliced into crescents)
  • 3 radishes (thinly sliced)
  • 2 serrano peppers (thinly sliced)
  • Chopped fresh cilantro for garnish
  • Spicy chili flakes for garnish

Instructions

  1. In a mixing bowl, combine the raw shrimp with 1 cup of lime juice. Let it marinate for about 20 minutes until the shrimp turn pink and opaque. Drain the shrimp, reserving ½ cup of lime juice.
  2. In a separate bowl, whisk together salt, white vinegar, reserved lime juice, chopped garlic, cilantro, jalapeno pepper, and serrano pepper until well combined.
  3. Add the marinated shrimp to the marinade mixture. Gently toss in thinly sliced red onion, cucumber crescents, radishes, and additional serrano peppers for extra heat.
  4. Allow it to sit for about 10 minutes for flavors to meld together. Serve chilled in bowls or on plates garnished with chopped cilantro and a sprinkle of spicy chili flakes.
