Ingredients

  • 1/2 pound turkey bacon (chopped and cooked crisp)
  • 4 cups broccoli (chopped, about 1 head)
  • 4 cups cauliflower (chopped, about 1 head)
  • 3/4 cup raisins (preferably golden)
  • 1/2 cup finely diced red onion
  • 1/3 cup sunflower seeds (salted)
  • 1 cup mayonnaise
  • 3/4 cup sour cream
  • 2 tablespoons vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 cup cheese crumbles

Instructions

  1. In a heavy-bottomed pan or cast iron skillet, cook the chopped turkey bacon until it is crispy.
  2. While the turkey bacon is cooking, chop the broccoli and cauliflower into small florets and finely dice the red onion.
  3. In a large mixing bowl, add all prepared salad ingredients including broccoli, cauliflower, onions, sunflower seeds, raisins, and turkey bacon.
  4. In a separate bowl, combine sugar and salt with vinegar. Whisk in mayonnaise and sour cream until smooth.
  5. Pour the dressing over salad ingredients and toss everything well to ensure all vegetables are evenly coated with dressing.
  6. Store in an airtight container in the refrigerator until ready to serve to allow flavors to meld together.
