Instructions
- Preheat your oven to 350°F (175°C) and line a standard muffin tin with paper liners.
- In a medium bowl, combine flour, brown sugar, oats, cinnamon, and salt. Cut in the cold butter using a pastry cutter until it resembles coarse crumbs. Refrigerate while preparing the cupcake batter.
- In another medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg until well combined.
- In a large bowl, cream together softened butter and granulated sugar using an electric mixer until light and fluffy.
- Add eggs one at a time while beating well after each addition. Then mix in vanilla extract.
- Gradually add dry ingredients to wet ingredients, alternating with milk. Mix on low speed just until combined after each addition.
- Gently fold diced apples into the batter using a rubber spatula.
- Divide batter evenly among muffin cups, filling each about 2/3 full.
- Generously sprinkle streusel topping over each cupcake.
- Bake for 22-25 minutes or until a toothpick inserted into the center comes out clean.
- Cool cupcakes in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- Beat together softened cream cheese and butter until smooth. Gradually add powdered sugar before mixing in vanilla, cinnamon, and salt.
- Once completely cool, pipe or spread frosting on top of each cupcake.
