Ingredients

Scale
  • 4 small or 3 large Gala apples (diced)
  • 340 g all-purpose flour
  • 225 g granulated sugar
  • 200 g dark brown sugar
  • 225 g sour cream
  • 85 g butter (room temperature)
  • 1 tbsp maple syrup
  • 1 1/2 tsp ground cinnamon
  • 2 1/4 tsp baking powder
  • ½ tsp salt
  • 40 g vegetable oil
  • 1 1/2 tsp vanilla extract
  • 125 g powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Prepare the apples: Toss diced apples with granulated sugar and ground cinnamon in a bowl.
  3. Make the crumb topping: Combine flour, dark brown sugar, and cinnamon; mix in softened butter until coarse crumbs form.
  4. In a large bowl, whisk together flour, baking powder, cinnamon, and salt. In another bowl, cream butter with granulated sugar until fluffy. Add eggs one at a time, followed by sour cream and vanilla extract. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Assemble: Pour half of the batter into the prepared pan; layer with half of the apple mixture and half of the crumb topping. Repeat with remaining batter, apples, and crumbs.
  6. Bake for about 70 minutes or until a toothpick comes out clean. Cool before adding maple glaze made from powdered sugar, maple syrup, sour cream, vanilla extract, and water.
