  • 900 g apples
  • 600 ml water
  • 700 g sugar (adjusted based on juice yield)
  • 1 sprig dried thyme per jar

Instructions

  1. Prepare apples by washing and cutting them into 1.5" – 2" chunks (do not peel or core).
  2. Cook the apple chunks in a large pan with water over low heat until softened.
  3. Transfer the mixture to a jelly bag placed over a bowl to extract juice without pulp.
  4. Measure the collected juice and add three-quarters of its volume in sugar to a new pan, along with one sprig of thyme.
  5. Heat gently until sugar dissolves; then increase heat until reaching setting point.
  6. Remove the thyme, pour the jelly into sterilized jars, adding one more sprig per jar before sealing.
