- 600 ml water
- 700 g sugar (approximately)
- 1 sprig dried thyme per jar
Instructions
- Prepare the Apples: Wash apples thoroughly, remove bruises, and cut into 1.5″ – 2″ chunks without peeling or coring.
- Cook the Apples: Place apple chunks in a large pan, add water, and cook on low heat until soft.
- Extract Juice: Transfer pureed apples to a jelly bag over a bowl to collect juice without squeezing.
- Mash Remaining Apples: Use a potato masher to extract more juice if needed.
- Combine Juice and Sugar: Measure juice, return it to the pan, add three-quarters of its weight in sugar along with thyme.
- Dissolve Sugar: Heat slowly until dissolved; sterilize jars while waiting.
- Jar Your Jelly: Remove thyme, increase heat until reaching setting point, then fill warm sterilized jars with jelly.
