Ingredients
- 2.5 lbs beef short ribs (bone-in)
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 cups apple vinegar
- 2 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 lbs Yukon gold potatoes, peeled and cubed
- 4 tablespoons unsalted butter
Instructions
- Season beef short ribs generously with salt and pepper. In a cast iron skillet or Dutch oven, heat olive oil over medium-high heat and sear the ribs on all sides until browned (3-4 minutes per side). Remove from pan.
- In the same pan, add onion, carrots, celery, and garlic; cook until softened (5-7 minutes). Stir in tomato paste and cook for another minute.
- Deglaze the pan with apple vinegar, scraping up any browned bits. Add beef broth along with thyme and bay leaves.
- Return seared ribs to the pot, bring to a simmer, cover and reduce heat to low. Braise for about 3 hours or until tender.
- Meanwhile, boil peeled and cubed Yukon gold potatoes until tender (15-20 minutes). Drain and mash with unsalted butter until smooth; season with salt.
- Once ribs are tender, let them rest before serving over buttery mashed potatoes with sauce spooned over top.
