  • 2.5 lbs beef short ribs (bone-in)
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups apple vinegar
  • 2 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 lbs Yukon gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter

Instructions

  1. Season beef short ribs generously with salt and pepper. In a cast iron skillet or Dutch oven, heat olive oil over medium-high heat and sear the ribs on all sides until browned (3-4 minutes per side). Remove from pan.
  2. In the same pan, add onion, carrots, celery, and garlic; cook until softened (5-7 minutes). Stir in tomato paste and cook for another minute.
  3. Deglaze the pan with apple vinegar, scraping up any browned bits. Add beef broth along with thyme and bay leaves.
  4. Return seared ribs to the pot, bring to a simmer, cover and reduce heat to low. Braise for about 3 hours or until tender.
  5. Meanwhile, boil peeled and cubed Yukon gold potatoes until tender (15-20 minutes). Drain and mash with unsalted butter until smooth; season with salt.
  6. Once ribs are tender, let them rest before serving over buttery mashed potatoes with sauce spooned over top.
