  • 3 cups chicken broth
  • 1 can (15 oz) pigeon peas, rinsed and drained
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and bell pepper; cook until soft (about 5 minutes). Stir in garlic and sauté for another minute.
  2. Add ground cumin and oregano; mix well to coat vegetables.
  3. Pour in rice; stir for about 2 minutes to lightly toast it. Then add chicken broth and bring to boil.
  4. Once boiling, reduce heat to low and mix in pigeon peas. Cover tightly and simmer for about 20 minutes or until rice is cooked through.
  5. Remove from heat, let sit covered for an additional 5 minutes. Fluff rice with a fork before serving.
