- 3 lbs. beef chuck
- 1 yellow onion, chopped
- 6 guajillo chilies, stems and seeds removed
- 4 ancho chilies, stems and seeds removed
- 3 chile de arbol, stems and seeds removed
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon dried Mexican oregano
- 2 1/2 cups beef broth
- 2 fresh bay leaves
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons flour
- 1 tablespoon neutral oil
- Corn tortillas, for serving
- White onion, diced, for serving
- Cilantro, chopped, for serving
- Radishes, sliced, for serving
- Lime wedges, for serving
Instructions
- Toast the dried chilies in a skillet over medium heat for 2–3 minutes until fragrant. Transfer to a saucepan with chopped onion and garlic, cover with water, and simmer for 10 minutes.
- Blend the softened chilies, onion, garlic, cumin, coriander, oregano, and beef broth until smooth. Season to taste with salt and pepper.
- Cut beef into 2-inch cubes; season with salt, pepper, and toss with flour. Brown in a Dutch oven over medium-high heat.
- Return browned beef to the pot, add enough sauce to cover the meat along with bay leaves. Cover and simmer on low for 2 hours until tender.
- Serve hot with warm tortillas and desired toppings.
