  • 2 tablespoons cornstarch
  • 2 1/2 cups whole milk
  • 1 large piece lemon peel
  • 1 large piece orange peel
  • 1 cinnamon stick
  • 5 large egg yolks
  • 1/2 cup white sugar (caster)
  • Additional sugar (for caramelization)
  • Fresh fruit or berries (optional)

Instructions

  1. In a heavy-based saucepan, heat the milk with lemon peel, orange peel, and cinnamon stick until simmering. Remove from heat.
  2. Dissolve cornstarch in a splash of water to create a slurry.
  3. In a mixing bowl, whisk together egg yolks and sugar until pale yellow. Add the cornstarch slurry and temper with hot milk.
  4. Strain out the peels and stick from the milk mixture, then combine slowly with egg mixture while whisking to prevent scrambling.
  5. Cook on low heat until thickened to pudding consistency.
  6. Divide into ramekins or clay dishes, cover with plastic wrap, and chill for at least 4 hours or overnight.
  7. Before serving, sprinkle sugar on top of each custard and caramelize using a blowtorch or under a broiler.
  8. Top with fresh fruit if desired and serve immediately.
