  • 3 medium zucchini
  • 1.25 lbs ground turkey sausage
  • 1/2 cup onion (finely diced)
  • 4 cloves garlic (minced)
  • 1/2 cup olives (pitted and sliced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup bread crumbs
  • 1/4 cup pine nuts
  • 1 large egg
  • Fresh basil, oregano, salt, black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis in half lengthwise and scoop out the flesh to create boats.
  3. In a skillet, heat olive oil over medium heat and sauté onion and garlic until soft. Add ground turkey sausage and cook until browned.
  4. In a mixing bowl, combine cooked sausage mixture with zucchini flesh, bread crumbs, olives, sun-dried tomatoes, basil, oregano, egg, salt, and pepper.
  5. Fill each zucchini boat with the mixture and place them in a baking dish.
  6. Bake for approximately 40 minutes until zucchinis are tender and tops are golden brown.
