Ingredients
- 3 medium zucchini
- 1.25 lbs ground turkey sausage
- 1/2 cup onion (finely diced)
- 4 cloves garlic (minced)
- 1/2 cup olives (pitted and sliced)
- 1/2 cup sun-dried tomatoes (chopped)
- 1 cup bread crumbs
- 1/4 cup pine nuts
- 1 large egg
- Fresh basil, oregano, salt, black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Slice zucchinis in half lengthwise and scoop out the flesh to create boats.
- In a skillet, heat olive oil over medium heat and sauté onion and garlic until soft. Add ground turkey sausage and cook until browned.
- In a mixing bowl, combine cooked sausage mixture with zucchini flesh, bread crumbs, olives, sun-dried tomatoes, basil, oregano, egg, salt, and pepper.
- Fill each zucchini boat with the mixture and place them in a baking dish.
