- 1 lb. small gold potatoes, cut into bite-sized pieces

- 2–3 cups of broccoli florets
- 1–2 lbs. salmon, cut into 2–4 filets
- 6–8 tablespoons butter
- 1–2 cloves garlic, minced
- 1 shallot, minced
- 2–3 sprigs of fresh thyme
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- juice of 1 lemon
- 2 tablespoons chopped fresh parsley or basil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss small gold potatoes with olive oil, garlic powder, salt, and pepper. Spread on the baking sheet and roast for 25 minutes until lightly browned.
- While the potatoes roast, prepare the lemon sauce: melt butter in a medium saucepan over medium-low heat. Sauté minced garlic, shallots, and thyme for 3–5 minutes. Add chicken broth and heavy cream; simmer until thickened. Stir in lemon juice and fresh herbs; season to taste.
- After 25 minutes, add broccoli florets around the potatoes and place salmon filets on top. Brush with oil, salt, and pepper. Bake for an additional 10–15 minutes until salmon is cooked through.
- Serve immediately with lemon sauce drizzled over the top.
