  • 1 tsp smoked paprika

  • 1 (6 oz) can tomato paste
  • 1 cup beef broth

Instructions

  1. Brown the beef chunks in a large pot over medium-high heat until browned on all sides, about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté chopped onion, garlic, and ginger until the onions are translucent, about 3-5 minutes.
  3. Add curry powder, cumin, turmeric, cayenne pepper (optional), smoked paprika, and ground coriander. Stir until fragrant.
  4. Return the browned beef to the pot and season with salt and black pepper. Pour in coconut milk and beef broth; mix well.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 2 hours or until the beef is tender.
