Ingredients

  • 200g beef sirloin or tenderloin, cut into cubes
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 cup snow peas
  • 1 onion, chopped
  • 2 tbsp soy sauce
  • 2 tsp vegetable oil
  • 1 egg, lightly beaten
  • Salt & pepper, to taste
  • 1 cup cooked rice (preferably day-old)
  • 1 cup carrots, finely diced
  • 1 cup corn kernels

Instructions

  1. Season beef with salt and pepper. Heat oil in a wok over high heat and sear beef cubes for 2-3 minutes until browned. Remove from heat.
  2. In the same pan, add garlic and onion, then stir-fry broccoli, sliced carrots, and snow peas for 3-4 minutes. Add soy sauce.
  3. In another pan, heat oil over medium heat. Stir-fry diced carrots and corn for about 2 minutes, scramble in an egg, then mix in cooked rice and soy sauce.
  4. Plate fried rice on one side of a dish with stir-fried vegetables and beef beside it.
