  • 2 pounds beef chuck
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • Neutral oil for cooking
  • 2 teaspoons garam masala
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • ½ teaspoon ground mustard
  • ½ teaspoon cayenne pepper (optional)
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • 2 tablespoons tomato paste
  • ¼ cup apple cider vinegar
  • 1 cup low-sodium beef stock

Instructions

  1. Cut the beef chuck into 2-inch cubes and season with salt and pepper.
  2. In a large skillet over medium-high heat, brown the beef on all sides and set aside.
  3. In the same skillet, add oil if needed and sauté the onions until caramelized. Add minced garlic and cook until fragrant.
  4. Stir in the spices and tomato paste until well combined.
  5. Pour in apple cider vinegar and beef stock; return the beef to the skillet.
  6. Cover and simmer on low heat for 60 minutes until the beef is tender.
