  • 1 large onion, diced

  • 1 lb ground beef (80/20 or leaner)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef broth
  • 1 can (15 oz) red kidney beans, drained & rinsed
  • 1 can (15 oz) black beans, drained & rinsed

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until soft.
  2. Stir in minced garlic and cook until fragrant.
  3. Add ground beef; break it up and brown for about 5–7 minutes.
  4. Mix in chili powder, cumin, smoked paprika, salt, and pepper; cook for 1 minute.
  5. Stir in tomato paste and cook until evenly blended.
  6. Add diced tomatoes and beef broth; mix well.
  7. Incorporate both types of beans and let simmer uncovered for 30–40 minutes.
  8. Taste and adjust seasonings before serving hot.
