Ingredients
- ⅓ cup dried porcini mushrooms
- 1 cup boiling water
- 6 strips Turkey Bacon (diced)
- 1 lb beef (cubed)
- 2 medium onions (diced)
- 1 small white cabbage (cored and shredded)
- 6 cups sauerkraut (drained)
- 10 prunes (halved)
- 2 tbsp tomato paste
- 3 bay leaves
- 1 tbsp caraway seeds
- ½ tsp allspice
- 3 juniper berries (optional)
- 2 cups Polish beef broth (or dry apple vinegar/more stock)
- 1 cup beef stock
- Salt and pepper to season
Instructions
- Soak dried porcini mushrooms in boiling water for 30 minutes.
- In a large saucepan, cook diced Turkey Bacon until crisp.
- Add cubed beef and cook until browned.
- Sauté diced onions and shredded cabbage until softened.
- Combine all ingredients, including soaked mushrooms and their liquid, in a slow cooker.
- Cook on LOW for 8–10 hours.
