  • 2 tablespoons granulated sugar
  • ⅓ cup unsalted butter, melted
  • 4 packages cream cheese (8 ounces each), softened
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs, room temperature
  • ½ cup rainbow jimmies

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and sugar. Stir in melted butter until well mixed. Press mixture into the bottom of a springform pan.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add granulated sugar; mix well. Incorporate sour cream and vanilla extract.
  4. Add eggs one at a time, mixing thoroughly after each addition. Gently fold in rainbow jimmies.
  5. Pour filling over crust in the springform pan and bake for about 60 minutes, or until set but slightly jiggly in the center.
