- 3/4 cup butter (softened)
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats (uncooked)
- 8 ounces cream cheese
- 1 can (14 ounces) sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 egg yolk
- 1 cup blueberries (or raspberries)
Instructions
- Preheat oven to 350°F. Line a 9×13 inch baking pan with parchment paper or coat with cooking spray.
- In a large bowl, combine softened butter, sugar, and brown sugar until well mixed. Stir in baking soda, salt, flour, and oats until smooth. Press half into the bottom of the pan and bake for about 13 minutes.
- While the base bakes, mix cream cheese until smooth in another bowl. Gradually whisk in condensed milk, then add vanilla and egg yolk until combined.
- Pour the cream cheese mixture over the baked base and sprinkle with blueberries. Top with remaining oat mixture and gently press down.
- Return to oven and bake for an additional 20-25 minutes until edges are golden brown.
