  • 6 oz. cream cheese (room temperature)
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon corn starch
  • 3/4 cup powdered sugar
  • 1 1/22 1/2 teaspoons milk or cream

Instructions

  1. Preheat your oven to 425°F (220°C) and line a muffin tin with paper liners.
  2. Toss 3/4 cup of blueberries with 1 tablespoon of flour; reserve remaining blueberries for topping.
  3. Prepare the crumb topping by mixing flour, brown sugar, salt, and melted butter until coarse crumbs form.
  4. In a bowl, combine dry ingredients: flour, baking powder, and salt.
  5. In another bowl, whisk together wet ingredients: egg, sugars, yogurt, vegetable oil, and vanilla.
  6. Mix wet ingredients into dry ingredients gently until just combined; fold in floured blueberries.
  7. For the cream cheese filling, blend cream cheese with granulated sugar, corn starch, and vanilla until smooth.
  8. Fill muffin cups halfway with batter; add cream cheese filling and remaining blueberries on top before sprinkling with streusel.
  9. Bake at 350°F (175°C) for 22–25 minutes until golden brown.
