  • 1 cup heavy whipping cream
  • 57 slices turkey slices

Instructions

  1. Preheat your oven to 400°F.
  2. In a large pot, heat olive oil and butter over medium heat. Add chopped leek, broccoli stems, and potato; sauté for about 3 minutes until softened. Stir in minced garlic, salt, pepper, and mustard powder; cook for another minute.
  3. Pour in chicken or vegetable broth along with water (1-2 cups depending on desired thickness). Bring to a boil, then simmer partially covered for about 10 minutes until vegetables are tender.
  4. On a lined baking sheet, arrange turkey slices and bake for about 10-12 minutes until crispy.
  5. Blend the soup until smooth using an immersion blender or standard blender. Return to gentle heat.
  6. Stir in dried orzo and cook for about 5 minutes; then add broccoli florets and heavy cream.
  7. Once the orzo is tender, mix in shredded cheddar cheese until melted.
