- 1/2 cup (113 g) unsalted butter, room temperature
- 3/4 cup (150 g) light brown sugar, packed
- 1/4 cup (50 g) granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla
- 1/3 cup Dutch-process cocoa powder
- 1 cup (125 g) all-purpose flour, spooned and leveled
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup semi-sweet chocolate chips
- 2 3/4 cups (345 g) all-purpose flour
- 1 teaspoon cornstarch
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (226 g) unsalted butter, cold and cubed
- 3/4 cup (150 g) light brown sugar, packed
- 2/3 cup (130 g) granulated sugar
- 1 egg, plus 1 egg yolk, room temperature
- 2 teaspoons vanilla
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F. Line two large baking sheets with parchment paper and set them aside.
- In a stand mixer bowl, combine the butter and brown sugar. Mix on medium speed for about 3 minutes until light and fluffy. Add the egg and vanilla; mix well.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually sift this mixture into the wet ingredients while mixing on low speed until fully incorporated. Use a spatula to fold in the chocolate chips gently. Set this dough aside.
- In another mixing bowl, add cold cubed butter along with brown sugar and granulated sugar. Start mixing on low speed, then increase gradually for about 4 minutes until fluffy with no visible chunks of butter. Mix in one egg followed by an additional egg yolk, scraping down sides after each addition. Add vanilla and combine well.
- In a separate bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually add this dry ingredient mixture to the wet mixture in two parts. Mix on low speed until just combined; do not over mix.
- Using a small cookie scoop, make balls of both brownie dough and chocolate chip cookie dough. Make chocolate chip balls slightly larger than brownie balls. Press one brownie ball together with one chocolate chip ball; roll into one uniform ball. Place on prepared baking sheets about 2 inches apart.
- Bake one sheet at a time in the center of your oven for about 8 to 9 minutes or until edges are set but tops remain slightly under baked. Do not over bake!
- Once baked, remove cookies from the oven. Let them cool on sheets for about 5 to 10 minutes before transferring to a wire rack to cool completely. Optionally sprinkle with flakey sea salt before serving!
