  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups sliced fresh peaches
  • 3 cups quartered fresh strawberries
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Prepare the brown butter by melting it in a saucepan over medium heat until golden brown and nutty.
  2. In a mixing bowl, combine flour and salt; add the cooled brown butter, then mix in water and vinegar until just combined. Chill the dough for at least 30 minutes.
  3. Combine sliced peaches, strawberries, sugar, cornstarch, lemon juice, and gently toss in another bowl.
  4. Preheat oven to 375°F (190°C). Roll out half of the dough into your pie dish and fill with the fruit mixture. Roll out the remaining dough for a top crust.
  5. Bake for about 70 minutes until golden brown and bubbly. Allow cooling before serving.
