Ingredients

Scale
  • 8 boneless skinless chicken thighs
  • 10 cloves garlic
  • 10 pieces fresh ginger
  • 700 ml chicken stock
  • 5 spring onions
  • 3 tablespoons kecap manis (sweet soy sauce)
  • Neutral oil for frying
  • Salt and ground white pepper to taste
  • Cooked rice for serving
  • Cucumber slices for garnish

Instructions

  1. Prepare the broth by smashing the garlic and ginger, then simmering them with chicken stock in a saucepan over medium heat. Add sliced spring onion whites.
  2. Marinate the chicken thighs with kecap manis, salt, and pepper in a mixing bowl for at least 10 minutes.
  3. Sauté the spring onion greens in neutral oil until wilted, then set aside.
  4. In the same pan, cook marinated chicken over medium-high heat until golden brown and caramelized. Add water from the marinade, cooking until it reduces to a thick sauce.
  5. Slice cucumber and serve alongside warm cooked rice topped with broth, chicken, sautéed spring onions, and sambal if desired.
