Ingredients

Scale
  • 1 sheet of puff pastry
  • 2 medium butternut squashes (about 2 lbs), peeled and diced
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 cup goat cheese (or feta cheese)
  • 1/4 cup heavy cream (or dairy-free alternative)
  • 1 egg (for egg wash)

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. In a mixing bowl, toss diced butternut squash with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for about 25-30 minutes until tender.

  4. 4. Roll out the puff pastry on a floured surface and fit it into your tart pan. Prick the bottom with a fork.
  5. 5. Spread the caramelized onions over the pastry base, layer with roasted squash pieces, crumble goat cheese on top, drizzle with cream, and sprinkle thyme.
  6. 6. Bake for approximately 25-30 minutes until golden brown.
  7. 7. Let cool for about 10 minutes before slicing and serving.
