  • 2 tablespoons lemon juice
  • 2 cups matchstick carrots
  • 1/4 cup yellow onion, finely diced
  • 1/3 cup dried sweetened cranberries
  • 1 cup canned mandarin segments, drained
  • 1/2 cup vanilla yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Cut both apples into matchstick-sized pieces and place them in a mixing bowl. Pour lemon juice over the apple slices and toss well. Let them soak for about 5 minutes.
  2. In another large mixing bowl, combine matchstick carrots, finely diced yellow onion, and dried cranberries. Add the marinated apples to this mixture.
  3. In the same bowl, add vanilla yogurt and mayonnaise along with sugar, salt, and pepper. Mix until well combined.
  4. Gently fold in the drained mandarin segments.
  5. Cover the salad with plastic wrap or a lid and refrigerate for at least three hours before serving.
