Ingredients
- 1 bunch celery, sliced
- 2 small gala or Honeycrisp apples, chopped
- 1/2 English cucumber, finely chopped
- 1 shallot, thinly sliced
- 8 pitted dates, chopped
- 1/2 cup walnuts or pecans
- 1/4 cup shaved Parmesan cheese
- 1 1/2 cups shaved Parmesan cheese
- 1/4 cup lemon juice
- 1 teaspoon Dijon mustard
- 1/4 cup mayonnaise
- 3 tablespoons olive oil
- 1 tablespoon honey
- 1 clove garlic, grated
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- In a large bowl, combine sliced celery, chopped apples, cucumber, shallots, dates, nuts, and Parmesan. Gently mix.
- In a separate bowl, whisk together lemon juice, Dijon mustard, mayonnaise, olive oil, honey, garlic, salt & pepper until smooth.
