  • 1 (20 ounce) package refrigerated cheese tortellini
  • 1 tablespoon fresh sage (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Boil water in a large pot and cook the tortellini according to package instructions until tender. Drain and set aside.
  2. While the tortellini cooks, slice the cremini mushrooms and chop the fresh sage.
  3. In a skillet, heat 1 tablespoon of butter and olive oil over medium-high heat. Add the chopped sage, cooking for about one minute until crispy. Remove from pan and set aside.
  4. In the same skillet, add sliced mushrooms and minced garlic with another tablespoon of butter. Sauté for about five minutes until browned.
  5. Combine cooked tortellini in the skillet with mushrooms, remaining butter, parmesan cheese, and crispy sage. Mix well, season with salt and pepper, and serve immediately.
