  • 1 cup vegetable oil

  • 4.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 2 tsp almond extract
  • 2 tsp cherry extract
  • 4 tbsp butter (melted)
  • 1/3 cup + 12 tbsp maraschino cherry juice
  • 45 cups powdered sugar (for icing)
  • 1/2 cup slivered almonds (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in almond and cherry extracts.
  4. In another bowl, whisk flour, baking soda, and cream of tartar together. Gradually add to the wet mixture until combined.
  5. Gently fold in the minced cherries.
  6. Scoop rounded tablespoons of dough onto prepared sheets and bake for 10-12 minutes or until edges are lightly golden.
  7. While cooling, prepare icing by mixing melted butter with reserved cherry juice and powdered sugar until smooth. Drizzle over cooled cookies.
