Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 medium white onion, diced
- 1 medium-sized spaghetti squash
- 1 jar Primal Kitchen Garlic Alfredo Sauce (or homemade)
- 3 cups broccoli florets
- 1/2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp pepper
Instructions
- Preheat oven to 400°F.
- Halve the spaghetti squash lengthwise; remove seeds and season cut sides with salt. Place cut side down on a baking sheet.
- In a large casserole dish, combine chicken breasts and diced onion; drizzle with olive oil and season with salt and pepper.
- Bake both dishes for 30 minutes.
- Remove from oven; dice chicken and scrape spaghetti squash strands into the casserole dish.
