Ingredients
- 500g diced chicken breast
- 2 cups broccoli florets
- 2 cups sliced mushrooms
- 1 small chopped onion
- 2 minced garlic cloves
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Olive oil for sautéing
- 1 cup jasmine or basmati rice
- 2 cups water
- Pinch of salt
- 1 tsp cornstarch + 2 tbsp water (for slurry)
- Chili flakes (optional)
- Salt & pepper to taste
Instructions
- Cook jasmine or basmati rice in salted water as per package instructions until fluffy.
- In a large skillet or wok, heat olive oil over medium-high heat. Add diced chicken seasoned with salt and pepper; cook until no longer pink (5-7 minutes). Remove and set aside.
- In the same pan, add sesame oil, onions, and garlic; sauté until fragrant (about 2 minutes).
- Add broccoli florets and mushrooms; cook until tender-crisp (3-4 minutes).
- Return the chicken to the pan and pour in soy sauce. Stir well to combine.
- Mix cornstarch with water to create a slurry; add to the pan and simmer until the sauce thickens slightly.
- Serve hot over steamed rice or noodles.
