  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, finely chopped
  • 2 tbsp chopped cilantro
  • 1 tsp fish sauce
  • 1 tsp soy sauce
  • 1/2 tsp red chili flakes (optional)
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper, to taste
  • 1 tbsp vegetable oil (for frying)
  • 1 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tbsp Thai red curry paste
  • 1 tsp turmeric powder
  • 1 cup coconut milk

Instructions

  1. In a mixing bowl, combine ground chicken, minced garlic, grated ginger, chopped green onions, cilantro, fish sauce, soy sauce, red chili flakes (if using), breadcrumbs, egg, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small meatballs about 1 inch in diameter.
  3. Heat vegetable oil in a skillet over medium heat and fry the meatballs until golden brown on all sides (about 5-7 minutes). Remove from skillet.
  4. In the same skillet, sauté minced garlic until fragrant. Stir in Thai red curry paste and turmeric powder; cook for another minute.
  5. Add coconut milk and mix until smooth. Return meatballs to the skillet and simmer gently for about 10 minutes.
