  • 6 cups low-sodium chicken broth

  • 2 stalks celery, diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, celery, and carrots for about 5-6 minutes until softened. Add garlic and cook for another minute.
  2. Pour in the chicken broth and season with salt, pepper, and optional bay leaf. Bring to a simmer and cook for about 10 minutes.
  3. Add pastina pasta and cook according to package instructions (about 6-8 minutes). Stir in shredded chicken towards the end of cooking.
  4. Remove from heat and stir in Parmesan cheese and parsley before serving hot.
