Ingredients
- 2 cups cooked shredded chicken
- 6 cups low-sodium chicken broth
- 2 tbsp extra virgin olive oil
- 1 medium onion, finely diced
- 2 stalks celery, diced
- 2 medium carrots, diced
- 3 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, celery, and carrots for about 5-6 minutes until softened. Add garlic and cook for another minute.
