  • 55 g light brown sugar
  • 65 g granulated sugar
  • 1 tsp vanilla extract
  • 65 g plain flour (all-purpose)
  • 15 g cocoa powder
  • 1 tsp baking powder
  • ½ tsp espresso powder
  • ¼ tsp salt
  • 75 g dark chocolate (melted)
  • 2¼ tsp powdered plant-based gelling agent
  • 45 ml fresh lemon juice
  • 400 g fresh raspberries
  • 100 g granulated sugar
  • 480 ml cold double cream (heavy cream)
  • 125 g fresh raspberries
  • 50 g dark chocolate shavings

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line a round baking pan with parchment paper.
  2. Whisk eggs, light brown sugar, granulated sugar, and vanilla until fluffy. In another bowl, sift flour, cocoa powder, baking powder, espresso powder, and salt; fold into the egg mixture. Gently mix in melted dark chocolate.
  3. Pour batter into the prepared pan; bake for about 20 minutes or until a toothpick comes out clean. Allow to cool completely.
  4. Mix the plant-based gelling agent with fresh lemon juice and set aside. Puree fresh raspberries with granulated sugar and strain if desired. Whip cold double cream until soft peaks form; fold in raspberry puree and bloomed gelling agent.
  5. Slice cooled sponge horizontally if desired; layer mousse between slices and refrigerate for at least three hours before serving.
