  • 1¾ cups flour
  • 1 cup unsweetened cocoa powder
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 1 tablespoon vanilla extract
  • 6 ounces chocolate pudding mix
  • 2 cups whole milk (for pudding)
  • 1½ cups unsalted butter (for frosting)
  • 6 cups powdered sugar
  • 26 Oreo cookies, crushed into crumbs
  • 10 ounces pectin-based gummy candies

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 baking pan.
  2. In a stand mixer, combine sugar, flour, cocoa powder, baking powder, baking soda, and salt on low speed.
  3. In another bowl, whisk together eggs, milk, oil, and vanilla extract; add to dry ingredients and mix until just combined. Gradually stir in hot coffee.
  4. Pour batter into the prepared pan and bake for 30–35 minutes until a toothpick comes out clean. Let cool completely.
  5. Prepare the pudding by whisking together pudding mix and milk; let sit for about 5 minutes until thickened. Spread over the cooled cake and refrigerate for 30 minutes.
  6. For the frosting, melt butter in a saucepan, whisk in cocoa powder until smooth. Cool slightly then add to stand mixer with powdered sugar and milk; mix until smooth.
  7. Spread frosting over the chilled pudding layer and garnish with crushed Oreo cookies.
