  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 2 cups Grated Zucchini (about 3 medium zucchinis)
  • 12 oz Semi-Sweet Chocolate Chips (divided; 8 oz for the bread mixture, 4 oz for topping)

Instructions

  1. Preheat the oven to 350ºF and prepare two loaf tins by greasing them.
  2. In a large mixing bowl, whisk together sugar, eggs, oil, and vanilla until combined.
  3. Gradually add flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg to the wet mixture until just incorporated.
  4. Fold in grated zucchini and 8 oz of chocolate chips until evenly mixed.
  5. Divide the batter into the prepared tins and top with remaining chocolate chips.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Cool in pans for about 5-10 minutes before transferring to racks to cool completely.
