- 3–4 heads of endive
- 6 slices prosciutto
- 1 honeycrisp apple
- 1/4 cup shaved parmesan
- 2 tablespoons dried cranberries
- 1/4 cup chopped candied walnuts
- 3 tablespoons olive oil
- 2 tablespoons whole grain mustard
- 1 tablespoon champagne vinegar
- 2 tablespoons lemon juice
- 1/2 tablespoon honey
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 1/2 cups raw, unsalted walnuts
- 1/2 of an egg white
- 1 teaspoon water
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar
- 2 tablespoons brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- Pinch of cayenne pepper
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat oven to 250°F. Prepare candied walnuts by whisking egg white, water, and vanilla. Toss walnuts in mixture then coat with sugar mixture. Bake for 55–60 minutes.
- Crisp prosciutto in a skillet over medium heat for 1–2 minutes per side until crunchy; let cool and chop.
- Thinly slice honeycrisp apple; toss in lemon juice if desired.
- Whisk together vinaigrette ingredients until combined.
- Assemble salad: arrange arugula in a wreath shape on a platter; layer endive leaves, apple slices, chopped prosciutto, cranberries, parmesan, and candied walnuts on top. Drizzle with vinaigrette before serving.
