  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled and chopped
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F and grease an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream together softened butter, granulated sugar, and vanilla until pale.
  4. Add eggs one at a time, beating well after each addition.
  5. Gradually mix in the flour mixture alternating with milk until just combined.
  6. In another bowl, mix brown sugar, cinnamon, and chopped apple for the filling.
  7. Layer half the batter in the pan, followed by half of the apple mixture; swirl gently.
  8. Top with remaining batter and apple mixture; sprinkle topping over the top.
  9. Bake for 45-55 minutes until a toothpick comes out clean.
  10. Cool before glazing with a mixture of confectioners’ sugar and water.
