  • 1 cup sour cream
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 4 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (optional, to thin if needed)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. For the crust, mix graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of a springform pan.
  3. For the cinnamon roll layer, combine softened butter, brown sugar, and ground cinnamon until creamy; spread over the crust.
  4. For the cheesecake filling, beat softened cream cheese until smooth; add sugar, eggs, vanilla extract, sour cream, brown sugar, and ground cinnamon; blend until fully combined.
  5. Pour the cheesecake filling over the cinnamon roll layer and bake for about 55 minutes or until set.
  6. Let cool completely before frosting with cream cheese frosting made by mixing softened cream cheese, unsalted butter, powdered sugar, and vanilla extract.
