  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In one bowl, mix dry ingredients: all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  3. In another bowl, cream together cold butter and granulated sugar until smooth. Add eggs and vanilla extract; mix until combined.
  4. Gradually incorporate the dry mixture into the wet ingredients until a dough forms.
  5. Roll out the dough into a rectangle, spread with cinnamon filling made from brown sugar, softened butter, and cinnamon; roll tightly.
  6. Cut into equal pieces and place on the baking sheet. Bake for 9–11 minutes until edges are golden.
  7. Cool on a rack before frosting with cream cheese icing.
