- 1 cup cold, unsalted butter, cubed (16 Tbsp.)
- 1 1/4 cup granulated sugar
- 2 large eggs
- 2 large egg yolks
- 1 tsp. vanilla extract
- 1 cup packed brown sugar (light or dark)
- 6 Tbsp. softened butter
- 2 Tbsp. cinnamon
- 8 oz. cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 1/2 cups confectioners sugar
- 1 tsp. vanilla extract
- 1/2 tsp. salt
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- In one bowl, mix dry ingredients: all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
- In another bowl, cream together cold butter and granulated sugar until smooth. Add eggs and vanilla extract; mix until combined.
- Gradually incorporate the dry mixture into the wet ingredients until a dough forms.
- Roll out the dough into a rectangle, spread with cinnamon filling made from brown sugar, softened butter, and cinnamon; roll tightly.
- Cut into equal pieces and place on the baking sheet. Bake for 9–11 minutes until edges are golden.
- Cool on a rack before frosting with cream cheese icing.
