  • Garlic
  • Kale or cabbage
  • Leeks
  • Vegetable broth

Instructions

  1. Peel and dice the potatoes, then set aside. Chop the onion, garlic, and leeks. For kale, remove stems and chop into smaller pieces.
  2. In a large pot over medium heat, add a splash of oil. Sauté the chopped onion, garlic, and leeks until fragrant.
  3. Add diced potatoes to the pot and pour in vegetable broth to cover the vegetables completely. Bring to a boil, then reduce heat and simmer until the potatoes are tender (about 15-20 minutes).
  4. Stir in chopped kale or cabbage for an additional 5 minutes until wilted.
