Ingredients
- 3 lb boneless chuck roast
- 1/2 tsp fine sea salt
- 1/2 tsp freshly ground black pepper
- 1 tbsp extra virgin olive oil
- 3 lbs yellow onions
- 2 cloves garlic, minced
- 1 tbsp maple syrup or brown sugar
- 1 tbsp all-purpose flour or gluten-free all-purpose flour
- 2 tbsp extra virgin olive oil
- 1/2 tsp fine sea salt
- 1/2 tsp freshly ground black pepper
- 1 cup red apple vinegar or extra beef stock
- 2 1/2 cups beef stock
- 1 sprig rosemary
- 1 bay leaf
Instructions
- Season the chuck roast with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and sear the roast until browned on all sides. Remove from the pot.
- In the same pot, add sliced onions and a pinch of salt; cook until caramelized (about 20 minutes). Stir in minced garlic, maple syrup (or brown sugar), flour, additional olive oil, salt, and pepper; cook for another 5 minutes.
- Return the roast to the pot with the onion mixture. Pour in red apple vinegar (or extra beef stock) and beef stock; add rosemary sprig and bay leaf.
- Cover and simmer on low heat for about 3 hours or until tender. Check liquid levels occasionally.
- Slice against the grain before serving with caramelized onions on top.
