  • 15.5 oz. black beans, drained and rinsed
  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp. chili powder
  • ½ tsp. kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp. fresh lime juice
  • ¼ tsp. garlic powder

Instructions

  1. Drain and rinse 15.5 oz each of black beans and black-eyed peas along with 15 oz of sweet corn. Pat dry.
  2. In a large mixing bowl, combine the rinsed beans, corn, 1 cup chopped cilantro, and diced peppers (½ cup each of red and orange).
  3. In another bowl, whisk together 1 tsp chili powder, ½ tsp kosher salt, ¼ cup granulated sugar, ½ cup olive oil, ⅓ cup white apple vinegar, 1 tbsp fresh lime juice, and ¼ tsp garlic powder.
  4. Pour the dressing over the bean mixture and stir gently until well coated.
  5. Refrigerate for at least 30 minutes before serving for optimal flavor.
