Ingredients

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup milk
  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups egg noodles or diced potatoes

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion powder, garlic powder, salt, and pepper until combined. Roll into small meatballs.
  2. Heat oil in a skillet over medium heat and brown meatballs for about 4-5 minutes. Remove and set aside.
  3. In a large pot, melt butter over medium heat and sauté onion, carrots, and celery until softened (about 5-7 minutes). Stir in flour and cook for another minute.
  4. Gradually add beef broth while whisking to prevent lumps. Bring to a simmer.
  5. Add nutmeg, salt, pepper, browned meatballs, and egg noodles (or potatoes). Simmer for 10-12 minutes until tender.
