  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tbsp chili powder
  • Salt and pepper to taste

Instructions

  1. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, heat olive oil. Sauté the onion until soft (about 5 minutes), then add garlic for another minute.
  3. Add chicken breasts, salt, pepper, cumin, and chili powder; stir to coat. Pour in chicken broth to cover the chicken. Simmer on low for about 20 minutes until cooked through.
  4. Remove chicken and shred it with two forks. Return shredded chicken to the pot along with cannellini beans and green chilies.
  5. Simmer for an additional 10 minutes, adjusting broth as needed for desired consistency.
