  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. Thaw the frozen corn by running it under warm water in a colander and drain thoroughly.
  2. In a large mixing bowl, combine the corn, cherry tomatoes, cucumber, red onion, and feta cheese gently.
  3. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, garlic powder, chili powder, salt, and pepper until smooth.
  4. Pour the dressing over the corn mixture and gently toss to coat. If using cilantro, fold it in now.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
