  • 1 pound elbow macaroni
  • 3 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 cups shredded sharp cheddar cheese
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Cook elbow macaroni in salted boiling water until al dente; drain and set aside.
  3. In the same pot, melt butter over medium heat. Add onion and garlic; sauté until softened.
  4. Stir in flour, cooking for 1-2 minutes until golden. Whisk in milk and cream, stirring until thickened.
  5. Season with nutmeg and pepper. Mix in spinach, cheddar, Parmesan, and mustard powder (if using) until smooth.
  6. Combine cooked macaroni with cheese sauce; transfer to the prepared baking dish.
  7. Optionally sprinkle panko breadcrumbs on top for added crunch.
  8. Bake for 25-30 minutes until golden brown and bubbly.
