- 1 (10-ounce) package frozen chopped spinach, thawed and drained

- Cook elbow macaroni in salted boiling water until al dente; drain and set aside.
- In the same pot, melt butter over medium heat. Add onion and garlic; sauté until softened.
- Stir in flour, cooking for 1-2 minutes until golden. Whisk in milk and cream, stirring until thickened.
- Season with nutmeg and pepper. Mix in spinach, cheddar, Parmesan, and mustard powder (if using) until smooth.
