Ingredients
- 500g minced chicken
- 1 egg
- 1 cup breadcrumbs
- 2 tbsp milk
- 2 cloves garlic, finely chopped
- 1 tbsp olive oil (for frying)
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup chicken stock
- 1 cup heavy cream
- 1 tsp smoked paprika
- 2 tbsp tomato paste
- Salt & pepper
Instructions
- In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, salt and pepper. Mix well and shape into small balls.
- Heat olive oil in a skillet over medium heat. Add meatballs and sear until golden brown on all sides. Remove from skillet and set aside.
- In the same skillet, add more olive oil and sauté onions until translucent. Stir in bell peppers and garlic until softened.
- Add smoked paprika, chicken stock, heavy cream, and tomato paste. Season with salt and pepper.
- Return meatballs to the skillet and simmer gently for about 10-12 minutes until cooked through.
