- 1 (14 or 16 oz.) package broccoli florets
- 1 cup shredded mild or medium cheddar cheese, divided
- 1 (10 3/4 oz.) can cream of mushroom soup
- 1/4 cup mayonnaise
- 1/4 cup milk
- 1 egg, lightly beaten
- 1/8 teaspoon salt
- 1 1/2 cups Ritz and/or Keebler Club cracker crumbs
- 1/4 cup butter, melted
Instructions
- Thaw and microwave the broccoli florets for about 5 minutes; drain thoroughly and cut into bite-sized pieces.
- In a mixing bowl, combine the thawed broccoli, 1/2 cup cheese, cream of mushroom soup, mayonnaise, milk, beaten egg, and salt. Spoon into a greased baking dish.
- Top with remaining cheese.
- In another bowl, mix cracker crumbs with melted butter until moistened; sprinkle evenly over the casserole.
- Bake in a preheated oven at 350°F for 45 – 50 minutes until bubbly and golden brown.
- Optionally prepare ahead by refrigerating before adding cracker topping.
