  • 1 (14 or 16 oz.) package broccoli florets
  • 1 cup shredded mild or medium cheddar cheese, divided
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • 1 1/2 cups Ritz and/or Keebler Club cracker crumbs
  • 1/4 cup butter, melted

Instructions

  1. Thaw and microwave the broccoli florets for about 5 minutes; drain thoroughly and cut into bite-sized pieces.
  2. In a mixing bowl, combine the thawed broccoli, 1/2 cup cheese, cream of mushroom soup, mayonnaise, milk, beaten egg, and salt. Spoon into a greased baking dish.
  3. Top with remaining cheese.
  4. In another bowl, mix cracker crumbs with melted butter until moistened; sprinkle evenly over the casserole.
  5. Bake in a preheated oven at 350°F for 45 – 50 minutes until bubbly and golden brown.
  6. Optionally prepare ahead by refrigerating before adding cracker topping.
